Hope you are enjoying this crisp cool weather this week. It has been a wonderful week to be out on the farm. Mark has been working clearing out crop beds and we have been working on getting the farm ready for colder weather. We have our 4th. FarmBox pickup this weekend and excited to say y’all will be seeing sweet potatoes this pickup. Also the last big harvest of bell peppers..really all the peppers. Peppers are really easy to freeze up for winter use. This is how I preserves my bell peppers which I throw in soups and pasta all winter long.
I wash and dice my bell peppers and lay them out on top of a paper towel lined cookie sheet. I spread them out into a single layer and put the whole cookie sheet into the freezer for couple of hours. Once they are frozen I remove the cookie sheet and toss the peppers into a ziplock freezer bag. This way a can remove as many peppers as i need from the bag and not have this big frozen clump of peppers to deal with. That’s it we’re done.
